will not be like the original ones ... I humbly apologize to Senesi (also because 'the real recipe is closely guarded). The only problem
'recover bitter ..... really hard to find, so replace it with the essence of bitter almonds, at least give that a typical taste, or at least try to accommodate you.
Here they are.


Cirta 32 ricciarelli Ingredients:
400 g blanched almonds, 250g caster sugar, 200g icing sugar, 2 egg whites, 1 teaspoon of vanilla extract, essence of bitter almonds (those who are 'more' fortunate than me and can not find 'add 20 grams of bitter almonds .... and here I 'like looking for gold).
Blend the almonds with 100 g of sugar in order to obtain a more 'thin as possible. Add the remaining sugar
compresto the icing, vanilla and essence of bitter almonds (you only need one teaspoon).
Mix almonds, whipped egg whites, just enough to support the dough.

Let it be 'for 12 hours, then finish to dry in oven at 100 degrees for 20 minutes (depending on the oven ... and still be ready when they have the characteristics of cracks) .
